Instructions
 

Step 1: Prepare the Chicken

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • While the oil is heating, season the chicken breasts with a pinch of salt, pepper, garlic powder, and paprika.
  • Once the oil is hot, add the chicken breasts to the skillet and cook for about 6-7 minutes per side, or until the chicken is golden brown and fully cooked through. (You can check by cutting into the thickest part to ensure it’s no longer pink.)
  • Once cooked, transfer the chicken breasts to a baking dish and set them aside for the next step.

Step 2: Cook the Bacon and Mushrooms

  • In the same skillet, add the bacon slices. Cook them over medium heat until they’re crispy, about 4-5 minutes.
  • Once cooked, remove the bacon from the skillet and place it on a paper towel to drain.
  • In the same skillet, add the sliced mushrooms and cook for 3-4 minutes, or until they soften and begin to brown. Stir occasionally to avoid burning.

Step 3: Make the Honey Mustard Sauce

  • In a small bowl, whisk together honey, Dijon mustard, mayonnaise, and lemon juice. Add a pinch of salt and pepper to taste.

Step 4: Assemble the Dish

  • Preheat your oven to 375°F (190°C).
